Ingredients

800 gr. (28 oz) of turnip greens (already cleaned)
4 potatoes
1 clove garlic
250 gr. (8,8 oz) cannellini beans (already cooked)
4 slices of stale bread
4 bay leaves
50 gr. (1,7 oz) black olives
olive oil to taste
salt to taste
water as needed
Preparation

1.In a large pot put 1 liter (33 oz) of water, a bit of salt, a clove of garlic, 4 bay leaves and potatoes peeled, washed and cut into large chunks.
2.After about 10 min. from when it starts to boil put the turnip greens cut into pieces. When it begins to boil again, add the bread.
3.When the potatoes and turnips will be cooked, remove some water in excess, add the beans and 50 ml. of extra virgin olive oil. Mix all ingredients well and add black olives.
4.Turn off the heat and let the pancotto rest closing the pot with a lid for about 5 min. before serving.
